Zucchini Meatloaf

Ingredients:

• ½ lb ground beef  

• ½ lb ground pork  

• ½ cup oatmeal  

• ½ cup fresh parsley, chopped  

• 2 small zucchini, coarsely chopped  

• 2 cloves garlic, chopped  

• 2 green onions, chopped  

• 1 large egg  

• Lemon pepper or lemon zest, to taste  

• 1 tsp lemon juice  

• Kosher salt & pepper, to taste  

• 1 tsp Blackwater Mustard  

• + 2 tbsp Blackwater Mustard (for topping)

Instructions:

1. Preheat oven to **350°F**.  

2. In a bowl, combine beef, pork, oatmeal, parsley, zucchini, garlic, green onions, egg, lemon juice & seasonings.  

3. Add **1 tsp Blackwater Mustard** into the mixture and combine well.  

4. Form into a loaf on a foil- or parchment-lined baking sheet.  

5. Spread **2 tbsp Blackwater Mustard** over the top of the meatloaf.  

6. Bake **1 hour**, or until cooked through.  

7. Rest briefly before slicing.

• Roasted carrots or green beans  

• Extra mustard for dipping
