Blackwater Zucchini Meatloaf

1⁄2 # ground beef

1⁄2 # ground pork

1⁄2 cup oatmeal

1⁄2 cup chopped fresh parsley

2 small Zucchini coarsely chopped

2 cloves garlic chopped

2 green onions chopped

1 large egg

lemon pepper or lemon zest to taste

1 tsp. of lemon juice

Kosher salt to taste and pepper

1 tsp. Blackwater Mustard

Mix all together
Form into a loaf on a flat baking pan (line w/ foil of parchment paper)
Spread 2 Tbsp. Blackwater Mustard over the whole Meatloaf
Bake @ 350 for 1 hour
Serve with new potatoes
