Salmon Patties

Ingredients:

• 14 oz can red Sockeye salmon  

• 2 eggs  

• ½ cup dry bread crumbs  

• 2 green onions, finely chopped (including tops)  

• ¼ cup mayonnaise  

• 1 heaping tbsp Blackwater Mustard  

• ⅛ tsp lemon pepper  

• ⅛ tsp dill

Instructions:

1. In a bowl, combine salmon, eggs, bread crumbs, green onions, mayonnaise, mustard, lemon pepper & dill.  

2. Mix well and let rest **15–20 minutes** to allow bread crumbs to absorb moisture.  

3. Heat a small amount of olive oil in a non-stick pan.  

4. Form mixture into patties and fry until golden brown on both sides.  

5. Serve hot. *Serves ~4.*
